I just heard from Phillippe that he has fixed this issue in v. 2.0.22 of the FluidSynth app. Hopefully it should now work fine on Chromebook.

There are no dumb questions here :). You can program a button (or button combination) to change the instrument, as in the screenshot below. You may want to use something like a "long-press" of one of the buttons so that you don't accidentally change the instrument by hitting one of the but...

I'll experiment a little and see what I can come up with. I see your point that a delay would be only necessary when the pressure is dropping, so wouldn't add latency to most notes. Thanks for your input on this. It's on my list to review the jump/drop algorithm again. The issue is largely one of the limitations of MIDI-- a real whistle also drops from the upper register to the lower one before going silent, but it's not really noticeable because it's such a smooth transition. ...
