Is there any way (or possible feature) to change the overblow behavior? For bagpipes, it feels weird to jump from G67 to G79, it might feel natural to jump to Gb68, A69 instead or something else.

At least from the Redpipes, when G4 is played, the overblow goes to something between G#4 or A4 dynamically depending of the strength used for overblowing.

Yes, the overblowing was designed more to mimic instruments that overblow one octave, and there's not a way to change the number of notes that overblowing controls, but that's something I might be able to consider adding.

What you're describing also sounds similar to the "pitch expression" feature, though. That's in the "pressure mapping" panel. The difference is that it gradually shifts the pitch sharper or flatter depending on blowing pressure, rather than jumping to a specific note. It was added because it was requested by bagpipers who wanted a bit more realism. Not sure if that's what you have in mind?

By default the "pitch expression" will both flatten and sharpen a note based on pressure, but if you turn off overblowing then you can turn on the "override pitch expression range" switch and then use the slider to give you some more control over the effect.

I understand what you said and that makes sense to me, however, I don't understand much the configuration as a simple slider.
I think you meant on this screen, but could you explain me how it works? I tried different settings and got different unwanted results.

Let's say I have drones to start at 5, chanter to start at 8. How should I configure that bar to get something close to G#4 (or A4)?

Sorry, I’m away from home this week so I’m not able to test this, but I’ll take a look on Monday.

I just played around with this a bit-- it looks like the range of this feature is currently limited to around one quarter tone, but I'm going to do some work on it soon, so I may be able to extend it to a semitone.

That is correct, I feel like the range is bit too low in comparison to real instrument. It would be great if the maximum could achieve the next note, or close to it.
